Crockpot Chili

1 lb ground beef
1/2 onion, chopped
3 cans chili beans
3 cans diced chili tomatoes
1 can tomatoe soup
1 packet chili seasoning

brown the ground beef with the chopped onion
pour the beef mixture into the crockpot and stir in all remaining ingredients
add garlic salt and peper {to taste}
cook on low for 4 hours or high for 2 hours

Baked Alaskan Meatloaf

1 pkg brown gravy mix
1 1/2 lbs ground beef
2 tsp minced onions (I use dried onion flakes)
1/4 tsp ground black pepper
1/2 cup bread crumbs
1 egg
1 tsp dried chives
4 cups mashed potatoes (I used a bag of steamed potatoes that I mashed with butter and milk)
1/2 cup shredded cheddar cheese

preheat oven to 350
mix gravy mix, ground beef, minced onions, pepper, bread crumbs and egg in large bowl
shape into a loaf, 2 inches high, in shallow baking dish
stir chives into prepared mashed potatoes
spread over meat loaf
bake 55 minutes or until cooked through
sprinkle with cheese and bake 2 minutes longer

Spaghetti Meat Sauce

3 lb ground beef
1/2 green bell pepper, chopped
1/2 onion, chopped
2 tbsp Italian seasoning
2 cloves garlic, minced
2 large cans tomato sauce

brown ground beef, drain, and return to stew pot
add bell pepper, onion, and garlic to beef and cook until tender
add Italian seasoning {to taste}
pour tomato sauce into beef mix
cook 30-45 minutes on low
season to taste

Layered Fiesta Taco Salad Bake

1 lb ground beef
1 can spicy chili beans, undrained
1 can corn, drained
1 cup salsa
1 package taco seasoning
2 cups crushed tortilla chips
1 medium tomato, chopped
1 cup shredded cheese {i use Mexican blend}
1 large avocado, cubed
shredded lettuce

crush chips and place in 2 quart casserole dish
brown ground beef and drain, return to pan
stir in beans, salsa, taco seasoning, and corn
bring to a boil, stirring often
pour meat mix on top of chips
top with tomatoes
top with cheese
bake at 350 for 30 minutes
top with avocado and shredded lettuce

Upside Down Taco Pizza

1 lb ground beef
1 packet taco seasoning
3/4 cup water
1 1/2 cups shredded cheese (i use Mexican blend)
1 box Jiffy corn muffin mix

brown beef, drain and return to pan
add taco seasoning and 3/4 cup water, cook on low for 5 minutes
in separate bowl mix corn muffin mix according to the package
pour meat in an 8x8 baking dish
cover with cheese
pour muffin mix on top of cheese
cook at 350 for 20 minutes or until golden brown

Poor Man's Taco Soup

1 lb ground meat cooked and drained
3 cans stewed tomatoes
1 can pinto beans
1 can dark red kidney beans
1 can hominy or corn
1 1/2 - 2 packets taco seasoning (based on how spicy you like it)
1 packet dry ranch dressing seasoning

mix all ingredients together in a stew pot
bring to a boil
reduce heat and simmer
(tastes the best if it has simmered for1 hour, but can be eaten once heated through)
